Authentic Fish-N-Chips London Style ?

Would really enjoy a “True authentic-London Fish batter” I need a super recipe for haddock and Cod made exactly like a true London pub would do it. I miss places like Arthur Treacher’s, Squire-Jacks,and the “Old speckle hen” in London. Please would someone offer an authentic recipe? And maybe an Authentic Tarter sauce to match?
Please only serious reply. I want to to be right for father-in-law.

I would take a basic batter and add a dark ale to it. Not a lot, just enough to give it a good flavor. You can buy a fish batter and do this yourself. Just flour the product before you batter it. It will hold the batter better.

Try this:

1 egg
1 c. warm stale beer
1 1/8 tsp. baking powder
1 c. flour
2 tsp. salt
3/4 tsp. pepper
1 tsp. garlic salt
Fish fillets

Mix all ingredients. Wash and dry fish (pat with towel). Cut fillets to desired size. Heat 2 inches of cooking oil in pan. Dip fish pieces in batter; fry briefly in hot oil turning as necessary. Adjust the batter ingredients as needed so it doesn’t get too thick or too thin.

After you wash and dry the fish, dredge it in plain or seasoned flour then batter and fry immediately. Fry your “chips” first and keep warm in the oven utilizing the same oil for both products. Make sure the beer is warm and if not stale at least flat. Serve wrapped in a fresh newspaper for the authentic effect. Don’t forget the malt vinegar.
